Biryani is one of my most favorite dishes, that to mutton biryani is a delight. I have made this a few times now , whenever i make it with love and stand by the cooker till the last steam goes off that biryani gets more tastier. I think everything lies in the cook’s mood, whatever our mindset is it just gets reflected in our dish and my only sincere advice is whenever you cook something dont trust your husband or others to do a thing on behalf of you, they’ll surely spoil it. I made the same biryani for diwali , as i had to take care of my daughter i asked my husband to turn off the stove after two whistles in the cooker but he totally forgot and it almost got to 4 whistles when i noticed , it was a disaster😂 . Just keep in mind that you are going to eat the best biryani before cooking , you’ll be astonished with the result. Now on with this wonderful recipe,
*First we can prepare the biryani spice powder.For making this just roast the whole spices(cinnamon,cumin,cloves,fennel,kal paasi,cardamom,mace,star anise) and grind them .These whole spices are available in a single pack which we can directly roast and grind. In my house i always stock up this powder as ill be using it very often.
*Now in a pressure cooker heat ghee and some oil and add onions and green chillies. Once they are tender add tomatoes and saute.
*Now add ginger garlic paste, salt, turmeric powder, chilli powder, coriander powder and our homemade biryani spice powder .
*Now add the mutton to this and saute well
. Add coriander leaves and water , now pressure cook this for about 7 whistles(approx. depends on your mutton).
*Soak the biryani rice for about 30mins. Now add the soaked rice to the cooker, add suffiecient water to it and pressure cook .
Our delicious mutton biryani is ready to be served. Do what you love and love what you do 😉
