This recipe was a new try. Trying out new things has really brought out a charishma over me. This one didnt disappoint me, the result turned out delicious. I never used to eat vegetables in my home but now things have changed alot for me. It only took 15-20mins to cook this food. This is a simple and easy one which everyone can give a try.
INGREDIENTS:
*Brinjal (small variety)
*Coconut
*Chilli powder
*Corriander powder
*Turmeric powder
*Tamarind (a small piece)
*Jaggery -little amount
*Salt
*Oil
PREPARATIONS:
*Take a handful of grated coconut along with chilli powder, corriander powder, turmeric powder, tamarind , jaggery and salt in a blender and blend it to a coarse paste
*Now make a crisscross slit at the bottom side of the brinjal and fill it with the grinded mixture.
*Once the stuffing is done heat oil in a pan and start cooking the stuffed brinjal, make sure to flip the sides.
* Cover and cook for about 5-10 mins . Our stuffed brinjal is ready.
